Sunny Egg and Spinach Leaves
Fried eggs with cherry tomatoes on a bed of spinach makes for a really healthy breakfast.
Ingredients
- 4 Eggs
- 10 cherry tomatoes
- 2 handfuls of spinach
- 1 tsp coconut oil
- Salt and pepper to taste
Instructions
- Put coconut oil in large frying pan to hig heat.
- Arrange spinach as you like on your plate.
- Crack eggs into frying pan and add tomatoes.
- serve when eggs are done to your liking and add salt and pepper to taste.
